Method In a large pan/skillet, sauté the onions in butter till they are crisp and tender. Add these to a slow cooker and pour the broth. Add the Worcestershire sauce, bay leaves and thyme. Cover the cooker and let the soup cook for at least 5 hours on a low flame.- After cooking it, strain it into soup bowls (oven/microwave friendly) and on top of every bowl, lay a slice of the toast and sprinkle it with grated cheese.Place the bowls on a baking tray and let it bake for 5 minutes till the cheese turns golden.
Cream Cheese Chicken Soup

3 cups chicken broth
2 peeled potatoes
1 tbsp butter or margarine
3 carrots, sliced
2 cups boiled chicken
1 cup milk
¼ cup flour

Sauté the onions in butter until they become golden brown.Add the onions, broth, carrots and potatoes in a large saucepan and let it boil. Cover the saucepan and let it cook for 20 minutes.Add the chicken, seasonings and let it heat through for another five minutes
Combine the flour and milk and stir till you get a smooth mixture. Add this to the broth and cook till the mixture thickens as per your liking. Add cream cheese and let the whole thing cook till the cheese melts.

1 pound ground beef
150 ml undiluted beef broth
1 green bell pepper, chopped
1 onion, chopped
3 tomatoes, diced
8 ounces tomato sauce
1 cup boiled sweet corn
¼ cup tomato puree
3 cups uncooked pasta (preferably spiral shaped)
½ cup Parmesan cheese
seasoning: salt, pepper and Italian seasoning
Cook the beef with the bell pepper, onion and garlic in a large saucepan till the meat becomes tender and turns pink. Drain the water.
Add the broth, tomatoes, tomato puree, corn, tomato sauce and seasoning to the beef and let it boil.Add the uncooked pasta and cover the saucepan and let it simmer till the pasta is tender (12-14 minutes).
Sprinkle with generous dollops of Parmesan cheese.Switch off the gas and serve the soup in bowls of your choice.

Vegan Lentil Soup
Whoever said that a vegan stew isn’t hearty and appetizing, hasn’t had the different variants of lentil soups which are trending all over the world. Lentil soups are low-calorie, low-fat yet full of flavour and nutrition and will keep you satiated for a long time.
¼ cup olive oil
1 onion, chopped
2 carrots, chopped
minced garlic cloves
1 tbsp cumin
1 tbsp curry powder
1 cup lentils of your choice
4 cups of strained vegetable broth
25 ounces tomatoes, diced
Seasoning of your choice- black pepper, chili flakes, salt.
Heat the olive oil in a saucepan and add the onions and carrots and let it cook for 5 minutes. Season with garlic, cumin and curry powder.
Add the chopped tomatoes and keep stirring to enhance the flavour.
Add in the broth, 2 cups of water, lentils and seasoning and bring it to a boil. Cover the saucepan and let the soup cook till the lentils are tender (approx 30 minutes). Switch off the gas and add in lemon juice and any vegetables of your choice before serving.
