Broccoli is the newest kid on the culinary bloc and is simultaneously taking the fitness world by a storm. Earlier this member of the cabbage family was either eaten raw or was boiled and added to salads; but now, this vegetable is one of the most experimented ingredients to create a complete dish for its nuanced flavor and versatility. Loaded with Vitamin C and K and mineral manganese, this is one vegetable you need to start adding to your dishes soon.

1. Roasted Broccoli and Bacon
This is a delight for all bacon lovers and is perfect for people following all kinds of diets including Paleo and Keto. Easy to make, loaded with protein and essential nutrients and delicious to devour, this recipe will soon become your favourite snack/dinner in no time.
Ingredients:
- 2 broccoli heads chopped into florets
- 4-5 slices of free-range bacon
- Coconut Oil (or olive oil, avocado oil or clarified butter)
- 4-5 cloves of garlic
- Lemon Juice/apple cider vinegar/salt/pepper for seasoning
Method:
Begin by pre-heating the oven to 200 degrees. Toss the chopped broccoli, coconut oil and bacon into a huge bowl and mix well. Add seasonings of your choice.
Transfer the ingredients from the bowl onto a baking dish. Do not place the pieces of broccoli over one another because it might result in under-cooked vegetables.Place the dish in the oven and let it roast for roughly 40 minutes. However, keep taking out the tray and stirring the vegetables and bacon every 10-12 minutes.
Garnish with lemon juice or Apple cider vinegar and serve hot.
Chef Tip: Add more fermented vegetables or a piece of steamed fish for a complete meal. You can also add cheese to spruce up the flavour and texture of your dish.
2. Garlic lemon broccoli pasta
If you are looking for ways to justify your pasta cravings, you can now do so by making an upbeat, healthy version. Cooked in a pot, this vegan dish takes only 20 minutes to make and tastes absolutely heavenly. Laced with tangy lemon, flavoursome garlic and the very healthy broccoli, this pasta dish is definitely the best recipe on the list.
Ingredients:
Pasta of your choice (We recommend penne; you can also use the gluten-free varieties)
– 1 Broccoli head chopped
– 2 Lemons
– 2-3 crushed garlic cloves
– Seasoning- oregano/chilli flakes/salt/pepper/olive oil for seasoning
– Parmesan (optional but recommended)
Method:
Add the pasta in boiling water and cook it to your liking.When the pasta is almost ready (3-4 minutes remaining), add the broccoli and let the two cook together. Drain the pasta once it is ready and keep aside.
In a pan, melt some butter and add the garlic. When garlic begins to turn brown, add the lemon juice and seasonings. Add the pasta back to the pan and let the entire thing cook for 2-3 minutes; keep stirring to allow the pasta and broccoli to absorb the garlic-lemon flavour. If it sticks to the pan add extra butter.
Top it with loads of Parmesan to complete the pasta dish. (optional)
3. Broccoli crust pizza
Whilst the cauliflower crust pizza has now become a routine, you can choose to spice things up with the very delicious and healthy broccoli pizza. Low in carbohydrate and gluten-free, this pizza is delicious and is a perfect accompaniment for your movie night cravings. It is also a very flexible dish as you can keep changing the toppings to suit your needs.
Ingredients:
– 2 Broccoli heads
– 1 beaten egg
– ½ cup parmesan cheese
– Pizza toppings (of your choice): tomato puree, mozzarella, pepperoni, oregano/chilli flakes
Method:
Preheat the oven to 400 degrees and line with a baking sheet.Grind the broccoli until it resembles rice and add a cup of water. After mixing it well with water, place the mixture in a cheesecloth to drain out the excess water.
Transfer the broccoli into a bowl and add parmesan, salt and an egg and mix well. Place the mixture onto the baking sheet and create your desired shape. Let the thickness for the crust be roughly ¼ inches.
Bake the broccoli crust until in turns golden brown which should roughly take about 40-45 minutes.
Take out the pizza but do not turn off the oven. Slather it with the tomato puree and add mozzarella and toppings of your choices. The most popular choices are pepperoni, bell peppers and olives.
Place the pizza back into the oven to cook with the toppings on for 8-10 minutes. Take it out and garnish well with chilli flakes and oregano.
Chef tip: Try the pineapple topping if you are bored of regular ones
